Why Compare by the Kilo?
Honey is sold in wildly different jar sizes. A 485 g (17 oz) tasting jar and a 4,750 g (10.5 lb) family jar sit on the same shelf, and their sticker prices cannot be compared directly. Only the price per kilogram puts them side by side.
The general rule: the larger the jar, the lower the price per kilo. A small jar's glass, lid, label and boxing cost more relative to the honey inside. That makes the tasting size the most expensive per kilo — you buy it to try a variety, not to save money.
Five Things That Set the Price
1. Variety
Chestnut honey costs more than wildflower honey because chestnut forest grows only in a narrow elevation band and blooms briefly. Karakovan honey costs the most of all: the bees build the comb from scratch, so the same labor yields far less honey, the log hives are made by hand, and the harvest happens once a year.
2. The season's yield
Honey prices do not hold steady year to year. Rain, frost and wind during the bloom decide the season's yield outright. A bad season can cut production in half, and prices move with it. Last year's price is not a reference point.
3. Elevation and flora
Honey gathered above 1,200 meters (about 3,900 ft) is not the same product as lowland honey. At altitude the bees work a shorter season and yield per hive drops.
4. Harvest and processing
Honey extracted without heat and passed through a coarse filter looks and keeps differently from heat-treated honey. Heating keeps honey clear and pourable and delays crystallization, but it damages the enzymes. Unprocessed honey is harder to produce and harder to sell — buyers often mistake crystallization for spoilage — and it is priced accordingly.
5. How many hands it passes through
Every step between the producer and the shelf adds its own margin: wholesaler, distributor, retailer. Buying direct from the producer shortens that chain.
