Why Do Honey Prices Vary? What's Missing in Cheap Honey?

Two jars of the same weight can differ in price by several times over, and that difference isn't all brand markup. Six concrete things determine honey's price: variety, harvest yield, harvesting method, whether it's been processed, packaging, and the number of resellers in between.

Below we go through these six items one by one. The goal isn't to say "expensive means good" — price alone isn't proof of quality. The goal is for you to see what the number in front of you actually represents.

1. Variety: Which Honey, What Difficulty

Not all honeys are produced with the same effort. The difference between a highland flower honey drawn from mixed flora and a thyme honey locked to a single plant's flowering period is how narrow a window the beekeeper has to fit into to obtain that honey.

For monofloral honeys, the hive is moved to the area where that plant grows, and the harvest is done within the few-week window when bees are mainly carrying that nectar. If the window is missed, what's left is mixed flower honey. With natural comb honey the job gets even harder: the bees build the comb themselves, the honey is sold together with the comb, and the amount taken from a single hive is far below that of a modern hive.

2. Harvest Yield: How Much Honey There Was That Year

Honey is an agricultural product, and its price moves from year to year. Rain during the flowering period, a late frost, a dry summer or bee diseases directly lower the harvest yield. In a year when the chestnut forest gets a late frost, chestnut honey prices rise; that's not a brand decision, it's simply that there is less honey.

So comparing "it was this price last year" isn't always meaningful. A price that hasn't moved for years doesn't prove anything on its own; a large-scale producer can keep the price steady through stock and blending. Still, it's worth asking which year's harvest that jar comes from.

3. Harvesting Method and Elevation

In high-elevation highlands and villages, the honey obtained per hive is below that of a lowland hive. The season is short, nights are cold, and bees fly less. On the other hand, the flora the nectar comes from is more varied. Moving the hive up to the highlands, tending it there, and bringing the honey back down is a cost item in its own right.

In migratory beekeeping, hives are moved several times over the season; transport, accommodation and labour all factor into the price. Stationary beekeeping doesn't have this cost, but its yield and variety are limited.

4. Heat Treatment and Filtering

When honey is heated it becomes fluid, is easy to fill into jars, crystallises later, and looks "always the same" throughout its shelf life. In large-scale production this is generally a cost-lowering process. In exchange, depending on the temperature and duration, the honey's enzyme activity drops, some of its aroma compounds evaporate, and its HMF level rises.

With filtering, the result depends on how fine the filter is: coarse straining only removes wax and bee fragments, while fine filtering clarifies the honey but also strains out some of the pollen grains — meaning the trace that shows the honey's botanical identity is weakened. Unheated, coarsely strained honey is more expensive, because it's both less processed and carries the risk of being returned as "spoiled" when it crystallises.

5. Packaging and Shipping

The price per kilogram is always higher for small weights: the lid, label, box and shipping for a 500-gram jar are almost the same as for a 2-kilogram one. Buying a tasting size looks expensive, but that's the cost of trying it.

Shipping is also the hidden part of the price. Honey is a heavy product; the shipping difference between a 5-kilogram shipment and a 500-gram one can reach a level comparable to the cost of the product itself.

6. Number of Resellers in Between

The same honey, after leaving the beekeeper, can pass through the wholesaler, packager, distributor and retailer stages. Each stage adds its own margin, and the final price ends up several times what the beekeeper received. Buying directly from the producer means shortening this chain; the product itself doesn't change, but the in-between margins drop.

On marketplaces, a different effect is at play: the same listing page has both the producer and someone selling an imported syrup blend as "natural honey". Sorting by price puts the two side by side, and the cheapest one rises to the top.

What Might Be Missing in Very Cheap Honey?

A price noticeably below the market average doesn't by itself mean "fake"; large-scale, efficient production can also bring the cost down. But one of the following possibilities is usually at play:

  • The honey was harvested before ripening, while its moisture content was still high (short shelf life, fermentation risk).
  • The bees may have been fed sugar syrup during the nectar flow period; this is a practice that counts as adulteration.
  • Syrup has been mixed directly into the honey — the C4 sugar test reveals this.
  • The product has been blended from mixed batches; its origin and harvest year can't be traced.
  • A cheap variety is being sold under the name of an expensive one (pollen analysis reveals this).

None of these can be known just by looking at the price. The way to know is to read the label, ask for the harvest year, and request the analysis report.

Frequently Asked Questions

Is expensive honey higher quality?

Not necessarily. Packaging, brand, sales channel and the number of resellers also raise the price. Price only carries meaning together with other information: harvest year, region, whether it's been heat-treated, and the analysis report. Without knowing these, neither being expensive nor being cheap proves anything.

Why is chestnut honey more expensive than flower honey?

Chestnut honey is a monofloral honey: the hive has to be moved to the chestnut forest and the harvest timed to coincide with the chestnut bloom. The window is narrow, and the yield is easily affected by frost and rain. Flower honey, drawn from mixed flora, is obtained over a wider time span and with a higher yield.

Why can supermarket honey be this cheap?

Large-scale purchasing, blending mixed batches, and standardising through heat treatment lower the cost. None of these is illegal on its own; but as a result, the product in your hand stops being the honey of one specific region and one specific harvest. The origin information on the label is the most practical way to see this difference.

Why is a small jar more expensive per kilo?

The cost of the lid, label, box and shipping doesn't scale with weight. A 500-gram jar's packaging cost is almost the same as a 2-kilogram one, and that cost is spread over less honey. A tasting size is the price you pay to try it.

Why does the honey price change every year?

Honey is an agricultural product. Rain during the flowering period, late frost, drought and bee health directly affect the harvest yield. In a bad year there is less honey, and the price rises. A product whose price never changes for years may not actually be coming from that year's harvest.
