The practical upshot: it's better to let a hot drink cool slightly before adding honey, and to dissolve crystallised honey in a warm-water bath rather than on the stove.
The second issue is moisture. Because honey is hygroscopic, it draws in water from the air; a loose jar lid or a wet spoon raises its water content and can eventually lead to fermentation. The Codex allows a maximum moisture content of 20% in honey; honey that absorbs moisture beyond this limit can start to ferment.
