Turkey's Food Codex Communiqué on Honey sets an upper limit of 0.8 mS/cm for flower honeys and lists chestnut honey among the exceptions to that limit — in other words, chestnut honey's high conductivity is expected, not a flaw. Conductivity alone, though, doesn't prove chestnut dominance; high conductivity also shows up in other dark honeys. Which Is More Beneficial?
Dark honeys generally measure higher in phenolic-compound content and antioxidant capacity than light-coloured honeys, and chestnut honey falls into that group.
