Pine honey is a honeydew honey. Unlike flower honey, its source is not blossom nectar: bees collect the sweet secretion associated with the pine scale insect Marchalina hellenica on pine trees. It is still real honey, but it has a different botanical route.

What Is Pine Honey and Why Is It Not Flower Honey?

Flower honey begins with nectar from blossoms; pine honey begins with honeydew on pine trees. This difference often gives pine honey a darker colour, a less overtly sweet taste and a higher mineral and electrical-conductivity profile.

How Does Pine Honey Form?

Marchalina hellenica feeds on pine sap and produces honeydew. Bees collect that honeydew, transform it in the hive and store it as honey. It is a natural process, not an added ingredient.

A Key Measure: Electrical Conductivity

Laboratories use electrical conductivity among several measures to distinguish honeydew honey from many nectar honeys. It is not a test consumers can reproduce at home.

Why Does Pine Honey Crystallise Slowly?

Its sugar balance often makes crystallisation slower than in many flower honeys. Slow crystallisation is normal; it is not proof of superior quality, and natural honey can still crystallise eventually.

Pine Honey Benefits: What Does the Evidence Say?

Like all honey, pine honey is mostly sugars with smaller amounts of minerals and plant-derived compounds. Some compositional studies show antioxidant activity, but this does not establish treatment benefits. Honey may soothe acute cough symptoms in people over one year old, while remaining free sugar that should be consumed in moderation.

Pine Honey or Chestnut Honey?

Pine honey usually tastes milder and less sweet; chestnut honey is more woody and bitter. Select according to taste rather than a claim that one is always healthier.

How Can You Identify Authentic Pine Honey?

Colour, thickness and delayed crystallisation are not conclusive. Choose a producer who identifies the harvest region and season; request suitable laboratory analysis where needed. Keep the jar sealed in a cool, dark place.
